*Celtic Sea Salt
*Extra Virgin Olive Oil
Julienne carrots using a vegetable peeler. Preheat oven to 375 degrees. Spray a non-stick muffin pan with olive oil cooking spray. Take a slice of the julienned carrots and form it around itself in a tight circle. Continue wrapping strips of carrots around the center until it will fit snugly in the sections of the muffin pan. Sprinkle with EVOO, Celtic sea salt and black pepper. Bake for 30 minutes and enjoy your healthy, delicious vegan treat! I ate this last night as my dinner, but they also make great appetizers or side dishes. I normally hate cooked carrots but these are sooooo gooooood! Try them and see for yourself! P.S.
