Raw Vegan Chocolate Peanut Butter Fudge

So, if you have been on the fence about the existence of God, this recipe proves that not only is there a God, but that He truly loves us. All kidding aside, I'm used to eating healthy foods, but I can say with all honesty that this is a dish that even the soda and hot wings crowd will love. =) 

It features an ingredient that is new to me but will definitely be a staple now that I have discovered it, Raw Organic Cacao Butter. I ordered mine from Amazon, (yay for Prime two-day shipping!) but it's available at many local co-ops and health food stores.

Raw cacao butter is a superfood known to be chock-full of anti-oxidants for heart health as well as contains magnesium, zinc, potassium, calcium and a fair amount of Vitamin C. It's also a mood-booster with phenylethylamine, seratonin and dopamine-not to mention that rich, intoxicating chocolate-y scent. AND this recipe contains peanut butter-what's not to love??? The fact that I used regular peanut butter is what makes this recipe "semi raw," but feel free to substitute raw peanut butter to make it fully raw.

Ingredients

  • 1 cup raw organic cacao butter, melted

  • 1/2 cup raw peanut butter

  • 1/2 cup agave or 1/4 cup maple syrup

  • 1/4 teaspoon celtic sea salt

  • 1 cup raw cacao powder

Directions

  1. Melt the cacao butter slowly with a bain-marie. Blend it with the peanut butter, agave or maple syrup in a food processor until it's smooth.

  2. Slowly add the cacao powder and blend until everything is well incorporated.

  3. Line a pyrex pan with parchment paper and pour your delicious mixture in, gently tapping on a flat surface to get rid of any air bubbles.

  4. Put it in the fridge to let set.

  5. After a few minutes when the top has slightly set, sprinkle on your desired amount of sea salt.

  6. Enjoy the beneficial deliciousness!
