Sugared Almonds, Pecans & Cashews

Fall may very well be one of the most delicious seasons of all, for many reasons. It's really nice for a fall-addict like myself to live in Portland, aka the Land of Eternal Autumn. With moving to Arizona next month, I'm not sure how I will get acclimated to living in eternal summer, but something tells me I will find a way to cope...

Here is the next installment of my delicious autumn-themed recipes, sugared nuts! There's nothing like getting a paper cone full of warm sugared nuts from the local farmer's market or harvest festival to put you in the mindset of a delicious autumnal experience. In this post I'm sharing a Cinnamon Sugar Pecan recipe along with a Chocolate Pumpkin Spice one; you can sub your nut of choice for either of the recipes. Read on below for details!


  • 1 lb. pecans

  • 1 egg white

  • 1 T water

  • 3/4 t salt

  • 1 C raw sugar

  • 1/2 t cinnamon


  • Preheat oven to 250 degrees. 

  • Whip egg white and water until frothy.

  • Mix together dry ingredients in a separate bowl.

  • Add pecans to whites, stir to fully coat nuts.

  • Toss pecans in dry ingredients until thoroughly coated.

  • Spread on a silicone baking mat on a cookie sheet.

  • Bake for 1 hour, stirring every 15 minutes.


Chocolate Pumpkin Spice Cashews

Ingredients & Directions

  • Same as above for Cinnamon Spice Pecans, sub pecans for 1 lb. of cashews and omit the cinnamon. In place of the cinnamon, add 3 t of Pumpkin Spice instant hot chocolate mix.

  • I used a hot chocolate mix my mom got me last year from Cost Plus World Market, but you can also easily make your own by adding a pumpkin spice mix (here's the link to mine) to instant hot chocolate---you can even add it to your coffee for your own homemade PSL! Get crazy with it!

  • These nut recipes are so good fresh out of the oven when they're nice and warm.

  • They also make a great gift put in a mason jar or see-through bag. Try it and let me know how much you and your family and friends enjoyed them!
