Herb-y Lentil Slow Cooker Soup!

Did you know that one cup of lentils has EIGHTEEN GRAMS of protein? Gives you a pretty good picture of the fact that being vegan and getting your protein is way easier than people often think. Today was a loooooonnnnnng day. I literally reset my alarm six times this morning. It was a day filled with emails, business facebook messages, and a freezing rainy day baseball game for my son. I threw this soup together in the slow cooker between after school, (laundry, dishes, homework, more messages) and the game. I feel like it could maybe use another veggie added to it, if you have any ideas, please comment them! But FYI it's very delicious as-is...my Meatatarian had no complaints and did not even notice that there was no meat in it!


  • 2 cups of lentils
  • 8-10 cups of water (depending on how thick you like your soups)
  • 2 large tomatoes
  • 1 white onion
  • 3 T olive oil
  • 6 T Bragg's Liquid Aminos
  • 1 T coriander seeds
  • 2 sprigs of fresh rosemary
  • 1 T minced garlic
  • 2 t Bragg's Nutritional Yeast
  • 1/4 t sage powder
  • 1 t white pepper


  • Cook in slow cooker on high for 3 hours or low for 6-7 hours. Enjoy your non-meatly sourced delicious vegan herb-y protein-packed soup! You can also add vegan sausage for added deliciousness and a heartier soup.
