Swiss Chard Wraps with Raw Vegan Almond Spread
It's so much easier to incorporate raw vegan foods into your diet than a lot of people think, that's why I started my do-it-your-way online Totally RAWsome New Year's challenge. Take for example the recipe I'm sharing with you today, Swiss Chard wraps with Raw Vegan Almond Spread (these are also fun to make as tacos, just fold the green in half instead of wrapping it!)
The swiss chard can be substituted with any leafy green you want (kale, etc.) and the other veggies you add to your wrap are totally up to you! Subbing a leafy green for a tortilla or other breaded wrap is great if you're trying to go gluten-free or want to cut back on the carbs. It's also an easy way to bring more nutritious greens into your diet. In the one I'm sharing today I used spiralized raw zucchini noodles and red peppers. Read below for the Raw Vegan Almond Spread recipe that's great on crackers and other foods too!
Raw Vegan Almond Spread
- 1 C raw almonds
- 1/4 t white pepper
- 1/4 t paprika
- 1/2 t sea salt
- 2 T lemon juice
- 1/4 C + water
- Put all ingredients in the food processor and process until smooth. Add more or less water according to your preference for the consistency of the spread. This recipe is also really tasty when cashews are subbed for almonds!
