Peanut Butter Overnight Oats

I love Sundays. Besides it being the day that we go to church, it's a time to reflect on the coming week and plan to tackle it victoriously through Christ who strengthens us! My son and I are headed to an early church service this week, and being that neither of us are particularly morning people, a make-ahead breakfast is always a good choice for a day that requires early rising. One of our favorites that's also full of nutritious benefits is overnight oats. Read on below for my recipe for Peanut Butter Overnight Oats.
Ingredients
- 1 C rolled oats
- 1 C vanilla almond milk
- 1 T chia seeds
- 1 T agave or maple syrup
- 2 T peanut butter
- 1 t raw cacao powder (optional, but who doesn't love chocolate?!)
Directions
- Stir all the ingredients together in a mason jar. (I like to use a chopstick.) Put a lid on the jar.
- Place in the fridge overnight.
- You can top it with cacao nibs or more chia seeds before you eat it the next day.
*This will keep up to two days in the fridge, but is best enjoyed the next day after making it.
*If you're really feelin' like some extra goodness, add 1-2 T mini chocolate chips...sooooo decadent! 🍫
*This is good for breakfast, lunch, or an in-between meal snack. Just because it's healthy, doesn't mean it can't be delicious!
