Vegan Cacao Sheet Pan Birthday Cake

It's no secret that I love chocolate. A quick perusal of the recipes here on my blog will confirm that as fact. I celebrated my 32nd birthday this past weekend and decided to do something a little different for my cake this year.

I saw a neat idea on Food52's Instagram to use flat cookie sheets to make your muffins, cakes and cookies on. It gives them a really cool thin, flat shape that adds a little architectural interest to your recipes that's also great for layering.

A couple months back I posted a recipe for delicious vegan Chocolate Cupcakes with Raw Cacao Cashew Cream Frosting, and that's the recipe I decided to try with the flat sheet, adding a couple of small handfuls of Enjoy Life Dairy-Free Chocolate Mega Chunks, because, why not?

I am so pleased with how it turned out! The cake is dense and moist and fudge-y and oh-so-decadent. To make it in a flat sheet pan, preheat the oven to 350F and make the same cupcake recipe mentioned above. Spray a flat sheet pan with nonstick spray, pour the batter in and cook for about 10 minutes, or until a toothpick poked in the center comes out clean. Let the cake cool completely before serving. I topped the cake squares with a ridiculously tasty vegan cacao frosting I came up with, here's the recipe:

Ingredients

  • 2 cups vegan powdered sugar

  • 1/4 cup melted coconut oil

  • 1/4 cup plain unsweetened vegan milk (almond, soy, coconut, etc.-I used soy this time)

  • 3/4 cup raw cacao powder

  • 1/2 teaspoon vanilla extract

Directions

  1. Using a sifter to remove any clumps, combine all the dry ingredients.

  2. Using a handheld or bowl mixer, add the wet ingredients to the dry ingredients and blend until smooth.

  3. Spread the deliciousness on cakes, muffins, crepes...anything you can think of because it's so good you will want to eat it straight out of the bowl! Go ahead, treat yo'self.
