#BrunchGoals: Sweet Potato Toast
Move over, avocado toast! There's a new #BrunchGoals toast in town...
Once again Instagram has given us a new, fun, healthy food trend: sweet potato toast. Now, I did have my reservations; one being that I'm not one to just jump on the newest wellness trend. Just because something is good, doesn't mean it's good for you specifically, or that it's a sustainably healthy choice for your body and your lifestyle. (For instance, check out my post about the benefits and risks involved with consuming activated charcoal.) Furthermore, wellness isn't something that should be trendy. We should all be striving for sustainably holistic health and wellness-that's something that will never go out of style.
Anyhoo, off my little wellness soapbox...according to the interwebs, this idea was originated by Little Bits Of blogger, Kelsey Preciado. It's predicated on the simple idea of slicing sweet potatoes, toasting them in your toaster, and then topping them with other delicious things. Sounds simple enough, right? Well it is!
TBH, I have always loved sweet potatoes, it's a love affair that began as a child, looking forward to my North Carolina born-and-bred Granny's world famous sweet potato pie. Okay, maybe they weren't world famous, but they were sure delicious enough to be.
My simple take on this Instagram-takeover dish is to top it with my super easy Two-Ingredient Cultured Coconut Yogurt and my seasonal, all-natural Pumpkin Spice Superfood Powder. I've also included some additional topping ideas below with the recipe. It's a great opportunity to get creative and add whatever you like to your sweet potato toast. The other cool thing about it is that you can make your toast sweet or savory depending on what you put on it.
This is one healthy food trend you should definitely give a try. Not only is it Insta-worthy #BrunchGoals, but it's great for breakfast, lunch or dinner (or even dessert!) and for anyone wanting to cut carbs or just mix it up a bit for their next healthy meal. Sweet Potato Toast is also a great make-ahead recipe to add to your meal prep regimen. Read on below for the simple recipe.
Ingredients
1 sweet potato, sliced
Cultured Coconut Yogurt
Pumpkin Spice Superfood Powder
Directions
Toast sweet potato slices in the toaster until they're at your desired softness. The time will vary based on your toaster. Be careful not to burn your fingers when taking out the sweet potato slices!
Let cool for a bit so your spread and toppings won't melt when you put them on the sweet potato slices.
Add your other toppings.
Enjoy!
