Vegan Pumpkin Spice Waffles
This recipe is definitely Autumn #BrunchGoals. It’s a variation of my Vegan Goth Waffles made with all natural Pumpkin Spice Superfood Powder, featuring real dehydrated pumpkin. These waffles also go great with my plantbased recipe for Oat Milk. (It’s an awesome alternative for those with nut allergies!) Read on below for the easy waffle recipe.
3 cups of all-purpose flour
2 cups of unsweetened almond milk (or your fave vegan milk)
4 tablespoons of melted coconut oil
2 teaspoons of baking powder
2 teaspoons of pure vanilla extract
2 teaspoons apple cider vinegar
1-2 tablespoons Pumpkin Spice Superfood Powder
1 pinch of salt
1/4 cup agave (optional)
Combine dry ingredients and mix thoroughly.
Do the same with the wet ingredients.
Using a mixer, slowly add the wet ingredients to the dry ingredients and mix well.
Prepare according to the instructions of your waffle maker. For mine, this recipe made about 3 waffles.
