Vegan Queso


This recipe’s inspo came from MyCandiShoppe when she did a takeover of Vitamix’s Instagram. Her version of dairy-free nachos looked so delicious, I had to put my own spin on it for a Family Movie Night.

I pretty much did a total redo of the ingredients to make it more like a queso dip. The paprika gives it a delicious smokiness that pairs nicely with the other seasonings.

The awesome thing about this recipe is that besides soaking the cashews, the rest is pretty much just one step of adding all the ingredients together in the blender. Read on below for the quick and easy recipe that’s great for parties or your next hygge-filled movie night. 



  • 1.5 cups raw cashews, soaked

  • 1/2-3/4 cup water

  • 1 tablespoon paprika

  • 1 teaspoon salt

  • 1 tablespoon chili powder

  • 3 tablespoons nutritional yeast

  • 1 teaspoon white pepper


  1. Soak the cashews overnight, or for at least four hours.  

  2. Drain the cashews, add them and the other ingredients to a blender.

  3. Blend until smooth.  

  4. Enjoy! 

Note: This vegan queso is delicious not only with tortilla chips, but as a dip for veggies or on pitas. Basically it’s good on anything you would use with dip.
