Simple Sweet Potato Noodles
My love affair with sweet potatoes began as a child when my Granny's world famous sweet potato pies were a staple at the family Sunday dinners. Now, as a grownup, I enjoy that eating sweet potatoes really feels like you're eating something decadent but without the guilt. Sweet potatoes are an excellent source of vitamins A, C, B1, B2 and B12; as well as potassium, dietary fiber, manganese and copper. Sauteéd in coconut oil with sea salt, this is a yummy treat that makes you forget that you're eating something healthy.
1 large sweet potato

Cut the ends off of the sweet potato. Use a spiralizer to make noodles. This is the spiralizer I use.
Heat a pan to medium high heat with 3-4 heaping spoonfuls of coconut oil.
Add the sweet potato "noodles" and 1-2 teaspoons of sea salt. Sautee the noodles until tender.
Remove the noodles and sprinkle the top with chia seeds. Add more salt to taste if desired.
