Superfood Pumpkin Spice Smoothie

It's fall, ya'll! Happy Autumnal Equinox!

Autumn signals the return of one of our all-time seasonal favorites: Pumpkin Spice. Like Ugg boots or yoga pants that have never actually seen a Downdog, Pumpkin Spice may be considered by many to be basic AF, but do we really care? I'm gonna go ahead and say no.

Even though temps still average in the high 80's-90's here in Arizona, autumn is definitely in the air. Fall is my favorite season, and I'd have to say living in Portland (aka "The Land of Eternal Autumn") was probably my favorite place to experience it thus far. The changing colors, the rain, the crisp air and local shops like Townshend's Tea CompanyThomas & Sons Distillery and Saint Cupcake, as well as the pumpkin patch at Sauvie Island were sweet traditions I looked forward to enjoying there. Not to mention fall fashion, both in the home and on your body! Big sweaters, cute boots and cozy blankets (hashtag: #hygge)...what more could you ask for?

So back to Pumpkin Spice, this fall I'm offering the yummy flavor for my Superfood Powders that feature non-GMO pumpkin powder (great source of vitamin A) and other fall spices that is especially awesome in baked goods, or in today's recipe, a pumpkin spice smoothie! The base of the smoothie is easy homemade pumpkin seed milk, it's then combined with the circulatory and antioxidant goodness of my Pumpkin Spice superfood powder. Pumpkin seed milk is a great vegan alternative to cow's milk for those with nut allergies. You can enjoy this delicious autumn drink regularly or iced smoothie-style.

Read on below for the simple recipe.

Ingredients (Pumpkin Seed Milk)

  • 1 cup pumpkin seeds

  • 2 cups filtered water

Ingredients (Pumpkin Spice Smoothie)

Directions (Pumpkin Seed Milk)

  1. Soak pumpkin seeds in one cup of water overnight.

  2. Drain the seeds.

  3. Combine pumpkin seeds with water and blend until smooth.

  4. Filter through a nut milk bag.

Directions (Pumpkin Spice Smoothie)

Regular Version:

  1. Combine Ingredients in a blender.

  2. Blend until smooth.

  3. Top with chia seeds and more pumpkin spice powder.

Cold Version

  1. Freeze pumpkin seed milk in ice cube trays a day in advance of making your smoothie, reserve some for when you actually make your smoothie.

  2. Add pumpkin seed milk and pumpkin spice Superfood Powder with enough pumpkin seed milk in a blender to reach your desired consistency.

  3. Top the same way you would the regular version and enjoy!

Note: You can make this smoothie with any vegan milk you want.
