Mashed Potato Bowls (Vegan or Not!)
This has got to be one of the easiest and most delicious meals that I’ve shared with you yet. I love one-bowl meals! Especially when they make use of leftovers and my family can choose what goes into them without a ton of work on my part. This is one such meal!
Basically, you just make mashed potatoes, and add fresh veggies (or meat too if you are so inclined...) This is a great meal idea to have on hand with the holidays coming up as you are sure to have leftovers.
Using mashed potatoes as the base of the bowl, add delicious things like lightly steamed carrots (or yummy turmeric carrots in my case), collard greens, even cranberry sauce if you want! I just heat everything up and put them in individual bowls and let my family build their bowls with the ingredients they want. Like I said, a great way to use leftovers, but you don’t have to wait for leftovers either-it’s a great anytime meal, especially if you have picky eaters in the house. Mashed Potato Bowl Ingredient Ideas
turmeric carrots (lightly steamed carrots, black pepper, sea salt, turmeric)
collard greens (lightly steamed collard greens, sea salt to taste, nutritional yeast, garlic powder)
homemade cranberry sauce
shredded turkey or chicken
green beans (green beans, sea salt, white pepper, garlic, lemon juice, vegan butter…because, why not?)
Wash it all down making use of leftover cranberries with my yummy antioxidant packed three-ingredient vegan cranberry milk.
