Simple Kale Salad
The New Year is the time for simple, (healthier) delicious and flavorful foods without a lot of fuss. This delicious kale salad is kicked up a notch with the addition of jalapeño and was born after looking in my parent’s fridge to see what I could put together for a quick, simple meal.
Kale is one of my faves, obvs. I use it all the time in smoothies, to make chips and serving lightly steamed.
Get a head start on your healthy New Year’s resolutions with this simple and delicious salad.
1.5 cups chopped kale
1 Roma tomato
1 jalapeño pepper
Cumin, Dill, Garlic Powder, White Pepper, Sea Salt (to taste)
1 avocado, chopped
Combine all ingredients except for avocado into a manual salad chopper (or pulse in a food processor) until ingredients are in small pieces.
Put in a bowl and add chopped avocado, stir to combine.
Enjoy on its own or eat with chips or crackers.
